Bright and tangy, Zesty Lemon Rice Krispie Treats offer a refreshing twist on a classic dessert with a perfect balance of citrus zing and marshmallow sweetness.

Ingredients

  • 6 cups Rice Krispies cereal
  • 4 cups mini marshmallows
  • 3 tablespoons unsalted butter
  • 2 teaspoons lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large saucepan, melt the butter over low heat.
  2. Add the mini marshmallows and stir continuously until completely melted and smooth.
  3. Remove from heat and stir in the lemon zest, fresh lemon juice, vanilla extract, and a pinch of salt.
  4. Gradually fold in the Rice Krispies cereal until evenly coated.
  5. Press the mixture firmly into a greased 9×13 inch pan using a buttered spatula or wax paper.
  6. Allow to cool at room temperature for about 30 minutes before cutting into squares.

Notes

For an extra zing, drizzle a light lemon glaze on top or sprinkle with extra lemon zest before serving.
