Yellow Squash Parmesan

Yellow Squash Parmesan is a deliciously baked dish featuring tender yellow squash layered with tangy marinara sauce and melted Parmesan and mozzarella cheeses, perfect as a comforting vegetarian entrée.

  • 4 cups thinly sliced yellow squash
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  3. Add sliced yellow squash to the skillet, season with salt, pepper, and dried Italian herbs, and sauté until slightly tender, about 5 minutes.
  4. In a baking dish, spread a thin layer of marinara sauce on the bottom.
  5. Layer half of the sautéed squash evenly over the sauce.
  6. Sprinkle half of the mozzarella and Parmesan cheeses over the squash.
  7. Repeat the layering with remaining squash and cheeses.
  8. Bake uncovered in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the squash is tender.
  9. Remove from oven and let rest for 5 minutes before serving.
  10. Garnish with fresh basil leaves if desired and serve warm.

Notes

For extra flavor, sprinkle some red pepper flakes on top before baking or serve with a crisp green salad for a complete meal.
