  • 1 tablespoon olive oil
  • 1 pound Italian sausage, removed from casings
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 (15 ounce) container ricotta cheese
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for garnish
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 9 lasagna noodles, broken into bite-sized pieces
  • 2 cups fresh spinach, roughly chopped

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in chicken broth, ricotta cheese, heavy cream, Parmesan cheese, oregano, salt, and pepper. Stir until well combined and the ricotta cheese is mostly dissolved.
  4. Bring the soup to a simmer, then add the broken lasagna noodles. Cook until the noodles are tender, about 8-10 minutes, stirring occasionally to prevent sticking.
  5. Stir in fresh spinach and cook until wilted, about 1-2 minutes.
  6. Serve hot, garnished with extra Parmesan cheese, if desired.

Notes

For a richer flavor, use bone broth instead of chicken broth. You can also add cooked shredded chicken or leftover rotisserie chicken to the soup for extra protein.
