Vanilla Pecan Pralines

Delight in the rich, creamy sweetness of Vanilla Pecan Pralines, a classic Southern confection featuring buttery pecans enveloped in a smooth vanilla-infused caramel.

  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups pecan halves
  • 1/4 teaspoon salt

Instructions

  1. Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium saucepan over medium heat, combine granulated sugar, brown sugar, heavy cream, butter, and salt. Stir continuously until the mixture reaches a full boil.
  3. Cook, stirring often, until the mixture reaches 238°F (soft-ball stage) on a candy thermometer.
  4. Remove from heat and stir in vanilla extract and pecan halves.
  5. Continue stirring vigorously for 3-5 minutes until the mixture thickens and becomes creamy.
  6. Drop spoonfuls of the praline mixture onto the prepared baking sheet.
  7. Allow pralines to cool and set at room temperature before serving.

Notes

For a nuttier flavor, toast the pecans lightly before adding to the mixture. Store pralines in an airtight container at room temperature for up to two weeks.
