  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup whole milk
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon lemon juice
  • Red or pink food coloring (optional)
  • Heart-shaped sprinkles or edible glitter for decoration

Instructions

  1. Preheat oven to 350°F (175°C) and grease a mini heart-shaped cake pan.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs one at a time to the butter mixture, beating well after each addition.
  5. Mix in the vanilla extract.
  6. Alternately add the flour mixture and milk to the wet ingredients, beginning and ending with the flour mixture. Mix until just combined.
  7. Pour batter evenly into the prepared mini heart molds.
  8. Bake for 15-18 minutes or until a toothpick inserted comes out clean.
  9. Allow cakes to cool completely on a wire rack.
  10. For the frosting, beat cream cheese, powdered sugar, lemon juice, and food coloring (if using) until smooth and creamy.
  11. Frost the cooled mini heart cakes and decorate with heart-shaped sprinkles or edible glitter.

Notes

For a richer flavor, add a teaspoon of almond extract to the batter or use whipped cream topping instead of cream cheese frosting.
