Delightfully soft and sweet, these Valentine Strawberry Cookies blend fresh strawberry flavor with a tender crumb — perfect for a romantic treat or festive celebration.

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup freeze-dried strawberries, crushed
  • 2 tablespoons fresh strawberry puree
  • Pink or red sanding sugar for decoration (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and crushed freeze-dried strawberries.
  5. Gradually add the dry ingredients to the wet ingredients, mixing gently until combined.
  6. Fold in the fresh strawberry puree, making sure it is evenly distributed throughout the dough.
  7. Roll dough into 1-inch balls and place them on the prepared baking sheet about 2 inches apart.
  8. Optionally, sprinkle the tops with pink or red sanding sugar for extra sparkle.
  9. Bake for 10-12 minutes or until the edges are lightly golden but centers remain soft.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra burst of strawberry flavor, drizzle melted white chocolate over the cooled cookies or sandwich them with strawberry jam.
