Tuscan chicken pasta

A creamy and flavorful Tuscan chicken pasta featuring tender chicken, sun-dried tomatoes, spinach, and a rich garlic Parmesan sauce, perfect for a comforting Italian-inspired meal.

  • 2 boneless, skinless chicken breasts
  • 8 oz penne pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. Season the chicken breasts with Italian seasoning, salt, and pepper.
  3. Heat olive oil in a large skillet over medium heat. Add chicken breasts and cook for 6-7 minutes per side or until fully cooked. Remove chicken from skillet and slice into strips.
  4. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  5. Add sun-dried tomatoes and cook for 2 minutes, then pour in chicken broth and heavy cream. Stir to combine.
  6. Simmer the sauce for 3-4 minutes until slightly thickened.
  7. Stir in Parmesan cheese until melted, then add fresh spinach and cook until wilted.
  8. Add the cooked pasta and sliced chicken back into the skillet. Toss everything to coat evenly in the sauce.
  9. Adjust seasoning with salt and pepper if needed, then serve warm.

Notes

For extra flavor, garnish with fresh basil or a sprinkle of crushed red pepper flakes. Serve with a side of garlic bread or a fresh green salad.
