Turmeric Ginger Chicken Noodle Soup

A soothing and flavorful chicken noodle soup infused with anti-inflammatory turmeric and spicy ginger, perfect for a comforting meal any day.

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken breast
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup egg noodles
  • Salt and black pepper, to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 5 minutes.
  2. Add minced garlic, grated ginger, and turmeric. Stir and cook for 1 minute until fragrant.
  3. Pour in the chicken broth and bring to a boil.
  4. Add sliced carrots and celery. Reduce heat and simmer for 10 minutes until vegetables are tender.
  5. Add shredded chicken and egg noodles to the pot. Cook until noodles are tender, about 7-8 minutes.
  6. Season with salt and black pepper to taste.
  7. Ladle soup into bowls and garnish with fresh parsley before serving.

Notes

For extra warmth and flavor, add a squeeze of fresh lemon juice or a pinch of cayenne pepper when serving.
