This Turmeric Chicken Soup is a comforting and flavorful dish packed with anti-inflammatory benefits. It’s a simple and nourishing meal, perfect for a cozy night in or when you’re feeling under the weather.

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 6 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1/2 cup cooked rice or quinoa (optional)
  • Salt to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. Add garlic, turmeric, ginger, and black pepper. Cook for 1 minute more, stirring constantly.
  3. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  4. Add shredded chicken and cooked rice or quinoa (if using). Simmer for another 5 minutes, or until heated through.
  5. Season with salt to taste.
  6. Garnish with fresh parsley before serving.

Notes

For an extra creamy soup, stir in a tablespoon of coconut milk at the end. You can also add other vegetables like potatoes or zucchini.
