A healthy and hearty Turkey Spinach Mushroom Skillet that combines lean ground turkey with fresh spinach and earthy mushrooms for a quick, flavorful meal.

  • 1 lb ground turkey
  • 2 cups fresh spinach, chopped
  • 1 1/2 cups mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup low sodium chicken broth

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and sauté for 3-4 minutes until translucent.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Add ground turkey to the skillet, breaking it apart with a spoon, and cook until browned, about 6-8 minutes.
  5. Add sliced mushrooms, salt, black pepper, oregano, and red pepper flakes. Cook for another 4-5 minutes until mushrooms soften.
  6. Pour in chicken broth and stir to combine, allowing it to simmer for 2-3 minutes.
  7. Add chopped spinach and cook until wilted, about 2 minutes.
  8. Adjust seasoning to taste and serve warm.

Notes

For extra flavor, sprinkle grated Parmesan cheese on top before serving or serve alongside warm quinoa or brown rice.
