  • 1 1/2 cups chocolate cookie crumbs
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • For the Filling:
  • 12 ounces semi-sweet chocolate, chopped
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • For the Ganache:
  • 4 ounces bittersweet chocolate, chopped
  • 1/2 cup heavy cream

Instructions

  1. Make the Crust: In a medium bowl, combine chocolate cookie crumbs, melted butter, and granulated sugar. Press into the bottom and up the sides of a 9-inch pie plate.
  2. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes. Let cool completely.
  3. Make the Filling: Place chopped semi-sweet chocolate in a heatproof bowl. Heat heavy cream in a saucepan until just simmering. Pour hot cream over the chocolate and let sit for 1 minute. Stir until smooth and glossy.
  4. In a separate bowl, beat cream cheese and powdered sugar until smooth. Add vanilla extract and mix well.
  5. Fold the melted chocolate into the cream cheese mixture until combined. Pour the filling into the cooled crust.
  6. Refrigerate for at least 4 hours, or preferably overnight.
  7. Make the Ganache: Place chopped bittersweet chocolate in a heatproof bowl. Heat heavy cream in a saucepan until just simmering. Pour hot cream over the chocolate and let sit for 1 minute. Stir until smooth and glossy.
  8. Pour the ganache over the chilled pie. Refrigerate for another 30 minutes to allow the ganache to set slightly.
  9. Serve chilled and enjoy!
