Triple Almond Cookies

Triple Almond Cookies are delightfully crunchy and flavorful cookies infused with almond extract, almond flour, and topped with sliced almonds for a rich almond experience in every bite.

  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure almond extract
  • 1/2 cup sliced almonds, for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together all-purpose flour, almond flour, baking powder, and salt.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Add the egg and almond extract to the butter mixture and beat until well combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Scoop tablespoon-sized dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Press sliced almonds gently on top of each cookie dough ball.
  8. Bake for 12–15 minutes or until edges are golden brown.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra almond flavor, try drizzling melted white chocolate over cooled cookies before serving.
