  • 1 pound Italian sausage, removed from casings
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 9 ounces cheese tortellini
  • 1 cup chopped fresh spinach
  • Grated Parmesan cheese, for serving

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  2. Add the olive oil, onion, carrots, and celery to the pot and cook until the vegetables are softened, about 5-7 minutes.
  3. Stir in the garlic and cook for another minute until fragrant.
  4. Pour in the chicken broth and crushed tomatoes. Add the oregano, basil, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Add the tortellini and cook according to package directions, usually about 3-5 minutes, or until tender.
  6. Stir in the spinach and cook until wilted, about 1 minute.
  7. Serve hot, garnished with grated Parmesan cheese.

Notes

For a spicier soup, use hot Italian sausage. You can also add other vegetables, such as zucchini or bell peppers. Top with a dollop of ricotta cheese for extra creaminess.
