Texas Caviar is a zesty and flavorful dip made with black-eyed peas, corn, and fresh vegetables in a tangy vinaigrette. It’s a crowd-pleasing appetizer or side dish perfect for any occasion.

  • 1 (15-ounce) can black-eyed peas, rinsed and drained
  • 1 (15-ounce) can whole kernel corn, drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the black-eyed peas, corn, red bell pepper, green bell pepper, red onion, jalapeño (if using), and cilantro.
  2. In a separate small bowl, whisk together the red wine vinegar, olive oil, lime juice, sugar, cumin, salt, and pepper.
  3. Pour the dressing over the black-eyed pea mixture and stir to combine.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled with tortilla chips.

Notes

For a spicier kick, leave the seeds in the jalapeño or add a pinch of cayenne pepper to the dressing. You can also substitute black beans for the black-eyed peas for a different flavor profile.
