Teriyaki Salmon Avocado Rice

A deliciously balanced dish featuring tender teriyaki-glazed salmon served over fluffy rice and creamy avocado, perfect for a quick and healthy meal.

  • 2 salmon fillets (6 oz each)
  • 1/4 cup teriyaki sauce
  • 1 cup jasmine rice
  • 1 ripe avocado, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon sesame seeds
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Cook the jasmine rice according to package instructions and set aside.
  2. Heat olive oil in a skillet over medium heat.
  3. Season the salmon fillets with salt and pepper.
  4. Place salmon in the skillet and cook for about 4 minutes on each side until cooked through.
  5. Pour teriyaki sauce over the salmon during the last minute of cooking to glaze.
  6. Remove salmon from heat and let rest for a minute.
  7. To serve, place cooked rice in bowls, top with teriyaki salmon and sliced avocado.
  8. Garnish with sesame seeds and sliced green onions.

Notes

For extra flavor, drizzle a little extra teriyaki sauce over the dish before serving or add a sprinkle of crushed red pepper for heat.
