Delicious Tater Tot Casserole

This classic tater tot casserole is the ultimate comfort food! Creamy, cheesy, and topped with crispy tater tots, it’s a family-friendly dinner that’s quick to prepare.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 cup shredded cheddar cheese, divided
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 (32 ounce) bag frozen tater tots
  • 2 tablespoons milk

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet, brown ground beef over medium heat. Drain off any excess grease.
  3. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Stir in cream of mushroom soup, diced tomatoes and green chilies, 1/2 cup of the cheddar cheese, garlic powder, salt, and pepper. Mix well.
  5. Pour the beef mixture into a greased 9×13 inch baking dish.
  6. Pour milk over the beef mixture.
  7. Arrange tater tots in a single layer over the top of the beef mixture.
  8. Sprinkle the remaining 1/2 cup of cheddar cheese over the tater tots.
  9. Bake for 30-40 minutes, or until the tater tots are golden brown and the casserole is bubbly.
  10. Let stand for 5-10 minutes before serving.

Notes

For a spicier kick, use pepper jack cheese or add a pinch of cayenne pepper to the beef mixture. Serve with a side salad for a complete meal.
