Scale
  • 4 cups mashed sweet potatoes (about 4 large sweet potatoes)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1/3 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup brown sugar

  2. Peel and boil sweet potatoes until tender, about 20 minutes. Drain and mash until smooth.
  3. In a large bowl, combine mashed sweet potatoes, granulated sugar, eggs, milk, melted butter, vanilla extract, and salt. Mix well until smooth.
  4. Pour the sweet potato mixture into a greased 9×13-inch baking dish.
  5. In a separate bowl, mix brown sugar, flour, chopped pecans, and melted butter until crumbly to create the topping.
  6. Sprinkle the pecan topping evenly over the sweet potato mixture.
  7. Bake for 25-30 minutes, or until the topping is golden brown and the casserole is heated through.
  8. Let cool a few minutes before serving.

Notes

For an extra special touch, add a marshmallow topping during the last 10 minutes of baking and broil briefly until golden and toasted.
