Delicious Stuffed Bell Peppers

These hearty stuffed bell peppers are packed with flavorful ground beef, rice, and vegetables, all baked to tender perfection. A comforting and colorful meal that’s sure to become a family favorite!

  • 4 large bell peppers (various colors)
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (8 ounce) can tomato sauce
  • 1 cup cooked rice
  • 1/2 cup frozen corn
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes.
  2. In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  3. Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in the diced tomatoes, tomato sauce, cooked rice, corn, parsley, Italian seasoning, salt, and pepper. Bring to a simmer.
  5. Spoon the beef mixture into the bell peppers, filling them to the top.
  6. Place the stuffed peppers in a baking dish and add about 1/2 inch of water to the bottom of the dish.
  7. Cover the baking dish with foil and bake for 30 minutes.
  8. Remove the foil and sprinkle the mozzarella cheese over the top of the peppers.
  9. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the peppers are tender.
  10. Let cool slightly before serving.

Notes

For a vegetarian option, substitute the ground beef with cooked lentils or quinoa. Top with a dollop of sour cream or Greek yogurt for added flavor.
