Strawberry Muffins

Delightfully moist and fluffy strawberry muffins bursting with fresh strawberry flavor, perfect for breakfast or a sweet snack.

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, salt, and baking powder.
  3. In a separate bowl, combine vegetable oil, egg, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the chopped strawberries, being careful not to overmix.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-22 minutes until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For an extra touch, sprinkle the tops with coarse sugar before baking for a sweet crunch.
