Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Beat in the egg, lemon juice, lemon zest, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in the chopped strawberries.
  7. Scoop dough by tablespoonfuls onto the prepared baking sheet, spacing cookies about 2 inches apart.
  8. Bake for 12-15 minutes or until edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
