Strawberry Cool Whip Cookies

Delightfully soft and fluffy, these Strawberry Cool Whip Cookies combine fresh strawberry flavor with a light, creamy texture, perfect for a sweet treat any time.

  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup Cool Whip (thawed)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup fresh strawberries, finely chopped

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another large bowl, beat sugar, Cool Whip, egg, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Fold in finely chopped strawberries gently.
  6. Drop tablespoon-sized dollops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes or until edges are lightly golden.
  8. Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra strawberry flavor, drizzle cooled cookies with a simple strawberry glaze made from powdered sugar and strawberry juice.
