  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1 tbsp all-purpose flour

Instructions

  1. Preheat oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press evenly into the bottom of the prepared pan.
  3. Bake crust for 10 minutes, then remove from oven.
  4. In a large bowl, beat cream cheese until smooth. Add 2/3 cup sugar, eggs, and vanilla extract; mix until creamy.
  5. Fold in flour until just combined.
  6. Pour cheesecake mixture over the warm crust and spread evenly.
  7. Evenly distribute chopped strawberries on top, gently pressing them into the batter.
  8. Bake for 35-40 minutes until edges are set but center slightly jiggles.
  9. Cool to room temperature, then refrigerate for at least 3 hours before cutting into bars.

For an extra touch, drizzle melted white chocolate over the bars before chilling or garnish with fresh mint leaves for a vibrant look.
