A flavorful and healthy dish featuring tender chicken breasts sautéed with garlic and fresh spinach, perfect for a quick and nutritious weeknight dinner.

  • 2 boneless, skinless chicken breasts
  • 3 cups fresh spinach leaves
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/4 cup chicken broth
  • 1 tablespoon lemon juice

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the chicken breasts and cook for 5-7 minutes on each side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  5. Add fresh spinach and cook until wilted, about 2-3 minutes.
  6. Pour in chicken broth and lemon juice, stirring to combine and scrape up any browned bits from the skillet.
  7. Return chicken to the skillet and cook for an additional 2 minutes, allowing the flavors to meld.
  8. Optional: sprinkle crushed red pepper flakes over the dish before serving for a spicy kick.

Notes

Serve this dish with steamed rice or crusty bread to soak up the delicious garlic sauce. For extra creaminess, add a splash of heavy cream or sprinkle with freshly grated Parmesan cheese.
