  • 2 cups frozen corn, thawed
  • 1/2 cup mayonnaise
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 1 lime, juiced
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • Tortilla chips, for serving (optional)

Instructions

  1. In a large bowl, combine the thawed corn, mayonnaise, cotija cheese, cilantro, jalapeño, and lime juice.
  2. Add the chili powder, smoked paprika, salt, and pepper. Mix well until all ingredients are combined.
  3. Taste and adjust seasonings as needed. Add more jalapeño for extra spice or lime juice for more tang.
  4. Serve immediately with tortilla chips for scooping, or chill for later.

Notes

For a creamier version, you can substitute some of the mayonnaise with sour cream or Mexican crema. You can also grill the corn for a smoky flavor before mixing.
