These Spanish Churro-Inspired Pancakes combine the fluffy texture of classic pancakes with the sweet cinnamon-sugar coating of traditional churros, perfect for a delightful breakfast or brunch treat.

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • Butter or oil for cooking

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix buttermilk, egg, melted butter, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
  4. Heat a non-stick skillet or griddle over medium heat and grease lightly with butter or oil.
  5. Pour 1/4 cup portions of batter onto the skillet and cook until bubbles form on the surface, about 2-3 minutes.
  6. Flip the pancakes and cook for another 2 minutes until golden brown and cooked through.
  7. In a small bowl, mix together sugar and ground cinnamon.
  8. While still warm, brush pancakes lightly with melted butter and sprinkle generously with the cinnamon-sugar mixture.
  9. Serve immediately with syrup, whipped cream, or your favorite toppings.

Notes

For an extra indulgent twist, serve with a drizzle of chocolate sauce or dulce de leche on top.
