Ingredients

  • 1 medium spaghetti squash
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil

Instructions

  1. Preheat oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Drizzle the cut sides with olive oil, and season with salt and pepper. Place cut-side down on a baking sheet.
  3. Roast for 40-50 minutes, or until the squash is easily pierced with a fork.
  4. Let cool slightly, then use a fork to scrape the inside of the squash into strands.
  5. Toss the spaghetti squash strands with marinara sauce.
  6. Serve topped with Parmesan cheese and fresh basil.

Notes

For a heartier meal, add cooked ground beef, sausage, or vegetables to the marinara sauce.
