Southern Cornbread

Southern Cornbread is a classic, moist and crumbly bread made with cornmeal and buttermilk, perfect as a side for any comfort meal.

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 425°F (220°C) and grease an 8-inch square baking pan or cast-iron skillet.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs with buttermilk and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 20-25 minutes or until the top is golden brown and a toothpick inserted comes out clean.
  7. Remove from oven and let cool slightly before slicing and serving.

Notes

For extra flavor, try adding a handful of corn kernels or diced jalapeños to the batter before baking.
