These sourdough discard sugar donuts are a delicious and easy way to use up starter discard, yielding soft, fluffy, and perfectly sweet fried treats coated in cinnamon sugar.

  • 1 cup sourdough discard
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/4 cup milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying
  • 1/2 cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. In a large bowl, whisk together the sourdough discard, egg, milk, melted butter, and vanilla extract until well combined.
  2. In another bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, stirring gently until a soft dough forms. Be careful not to overmix.
  4. Turn the dough onto a floured surface and gently knead a few times until smooth.
  5. Roll out the dough to about 1/2 inch thickness and cut out donuts using a donut cutter or two round cutters.
  6. Heat vegetable oil in a deep pot to 350°F (175°C).
  7. Carefully fry the donuts a few at a time for about 1-2 minutes per side or until golden brown.
  8. Use a slotted spoon to remove the donuts and drain on paper towels.
  9. Mix the cinnamon and sugar in a shallow bowl and toss the warm donuts in the mixture until well coated.
  10. Serve immediately for best texture and flavor.

For extra flavor, try glazing the donuts with a simple vanilla glaze or dipping them in melted chocolate after the cinnamon sugar coating.
