Sourdough Discard Brownies Recipe

  • 1 cup unsalted butter
  • 8 oz semi-sweet chocolate, chopped
  • 1 1/4 cups granulated sugar
  • 3/4 cup packed brown sugar
  • 1 cup sourdough discard (unfed)
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
  2. Melt butter and chopped chocolate together in a heatproof bowl over simmering water, stirring until smooth; let cool slightly.
  3. Whisk granulated sugar, brown sugar, and sourdough discard in a large bowl until combined.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Pour in the melted chocolate mixture and stir to combine.
  6. In a separate bowl, sift together flour, cocoa powder, salt, and baking powder.
  7. Gradually fold dry ingredients into the wet mixture until just combined.
  8. Pour batter into prepared pan, smoothing the top.
  9. Bake for 30–35 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.
  10. Allow brownies to cool completely in the pan before cutting into squares.

Notes
