Ingredients

Scale
  • 1 cup sourdough starter discard
  • 1 1/2 cups rolled oats
  • 1 cup fresh blueberries
  • 1/3 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, combine sourdough starter discard, honey (or maple syrup), melted coconut oil, and vanilla extract; mix well.
  3. In a separate bowl, whisk together rolled oats, baking soda, salt, and cinnamon.
  4. Fold the dry ingredients into the wet mixture until evenly combined.
  5. Gently fold in the fresh blueberries, being careful not to crush them.
  6. Spread the batter evenly into the prepared baking pan and smooth the top.
  7. Bake for 25-30 minutes, or until the edges turn golden and a toothpick inserted comes out clean.
  8. Allow bars to cool completely in the pan before slicing into 9 squares.

Notes

For extra crunch, sprinkle chopped nuts or seeds on top before baking, or serve bars warmed with a drizzle of yogurt or nut butter.
