Homemade Snickerdoodle Banana Bread

This Snickerdoodle Banana Bread is a delicious twist on classic banana bread, infused with cinnamon and sugar for a sweet, spiced treat perfect for breakfast or dessert.

  • 3 ripe bananas, mashed
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon baking powder
  • 1/2 cup sour cream
  • 2 tablespoons sugar (for cinnamon sugar topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, cream together the softened butter and 1 cup granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and mashed bananas.
  4. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, cream of tartar, and baking powder.
  5. Gradually add the dry ingredients to the banana mixture, alternating with sour cream, mixing just until combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Mix 2 tablespoons sugar with 1 teaspoon of cinnamon and sprinkle evenly over the batter.
  8. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For an extra cinnamon kick, sprinkle a little cinnamon sugar on top of each slice before serving. Enjoy with butter or cream cheese for added richness.
