Slow Cooker Goulash

A hearty and comforting Slow Cooker Goulash combining tender beef, tender macaroni, and rich tomato sauce simmered to perfection for an easy weeknight meal.

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups elbow macaroni, uncooked
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. In a skillet over medium heat, brown the ground beef until no longer pink; drain excess fat.
  2. Transfer beef to the slow cooker. Add diced onion, minced garlic, tomato sauce, diced tomatoes, beef broth, Worcestershire sauce, paprika, Italian seasoning, salt, and pepper.
  3. Stir to combine all ingredients thoroughly.
  4. Cover and cook on low for 6 hours or on high for 3 hours.
  5. About 30 minutes before serving, stir in the uncooked elbow macaroni.
  6. Cover and continue cooking until macaroni is tender, about 25-30 minutes more.
  7. Optional: Stir in shredded cheddar cheese until melted before serving.

Notes

For added flavor, top with fresh parsley or serve with a dollop of sour cream. You can also substitute ground turkey for beef for a lighter version.
