  • 1 lb boneless, skinless chicken breasts
  • 2 cans (15 oz each) white hominy, drained and rinsed
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1 can (4 oz) diced green chilies
  • 1 lime, juiced
  • Fresh cilantro, chopped (for garnish)
  • Diced avocado (optional, for serving)
  • Thinly sliced radishes (optional, for serving)

Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add the chopped onion, garlic, hominy, and diced green chilies on top.
  3. Pour in the chicken broth and season with cumin, oregano, chili powder, smoked paprika, salt, and black pepper.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  5. Remove the chicken breasts, shred them with two forks, and return the shredded chicken to the slow cooker. Stir to combine.
  6. Add lime juice and adjust seasoning if needed.
  7. Serve hot, garnished with fresh cilantro, and optional toppings like diced avocado and sliced radishes.

Notes

For extra depth of flavor, serve with warm corn tortillas and a drizzle of hot sauce. You can also swap chicken thighs for a richer taste.
