This Skillet Cranberry Orange Chicken features tender chicken breasts cooked in a vibrant, tangy cranberry and orange sauce, perfect for an easy yet elegant weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh cranberries
  • 1/2 cup orange juice (freshly squeezed)
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated orange zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh rosemary or thyme for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt and black pepper.
  3. Place chicken in the skillet and cook for 6-7 minutes per side until golden brown and cooked through. Remove chicken and set aside.
  4. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
  5. Add fresh cranberries, orange juice, honey, balsamic vinegar, and orange zest. Stir well and bring to a simmer.
  6. Cook the sauce for about 8-10 minutes until cranberries burst and the sauce thickens slightly.
  7. Return chicken breasts to the skillet, spoon sauce over them, and cook for another 2 minutes to heat through.
  8. Garnish with fresh rosemary or thyme if desired before serving.

For a complete meal, serve this dish over rice or alongside roasted vegetables to soak up the delicious cranberry-orange sauce.
