Shrimp with Creamed Corn Feta

Delight in tender shrimp served atop a rich, creamy blend of sweet corn and tangy feta cheese, creating a perfect balance of flavors and textures in this quick and elegant dish.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 cups fresh or frozen corn kernels
  • 4 oz feta cheese, crumbled
  • 1/2 cup heavy cream
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper, to taste
  • 1/2 tsp smoked paprika (optional)

Instructions

  1. Heat olive oil and 1 tablespoon of butter in a skillet over medium heat. Add garlic and sauté until fragrant, about 30 seconds.
  2. Add shrimp to the skillet, season with salt, pepper, and smoked paprika. Cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.
  3. In the same skillet, melt remaining butter and add corn kernels. Cook for 3-4 minutes until corn is tender.
  4. Reduce heat to low and stir in heavy cream and crumbled feta cheese. Stir until cheese is melted and the mixture is creamy, about 2 minutes.
  5. Return shrimp to the skillet and toss to combine with the creamed corn and feta mixture. Warm through for 1-2 minutes.
  6. Garnish with chopped fresh parsley and serve immediately.

Notes

For an extra touch of freshness, squeeze a little lemon juice over the shrimp before serving or serve with crusty bread to soak up the creamy sauce.
