Shrimp Fried Rice

Shrimp Fried Rice is a flavorful and quick Asian-inspired dish packed with succulent shrimp, vegetables, and fluffy rice, perfect for a satisfying weeknight meal.

  • 2 cups cooked jasmine rice (preferably day-old)
  • 12 oz raw shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1/2 cup frozen peas and carrots, thawed
  • 2 large eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 3 green onions, sliced
  • Salt and pepper, to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side; remove and set aside.
  3. Add the remaining oil to the skillet and sauté the garlic and onion until fragrant and translucent, about 2 minutes.
  4. Push the garlic and onion to the side and pour the beaten eggs into the pan, scrambling until just set.
  5. Add the peas and carrots, stirring to combine.
  6. Stir in the cooked rice, breaking up any clumps, and cook for 2-3 minutes until heated through.
  7. Return the shrimp to the pan and mix well.
  8. Add soy sauce, oyster sauce, and sesame oil; stir to evenly coat all ingredients.
  9. Season with salt and pepper to taste.
  10. Remove from heat and garnish with sliced green onions before serving.

Notes

For extra flavor, garnish with chopped cilantro or serve with a squeeze of fresh lime juice for a bright finish.
