These Short Rib Sliders feature tender, slow-cooked beef paired with a tangy balsamic cranberry sauce, perfect for a flavorful appetizer or casual dinner.

  • 2 lbs beef short ribs, bone-in
  • 1 cup beef broth
  • 1/2 cup balsamic vinegar
  • 1 cup fresh cranberries
  • 1/4 cup brown sugar
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme, chopped
  • Salt and pepper to taste
  • 12 slider buns
  • Butter for toasting buns
  • Arugula or baby spinach for serving

Instructions

  1. Season short ribs with salt and pepper. Sear in a hot skillet over medium-high heat until browned on all sides, about 3-4 minutes per side.
  2. Transfer ribs to a slow cooker. Add beef broth, onion, garlic, and thyme. Cover and cook on low for 6-8 hours until meat is tender and falling off the bone.
  3. While ribs cook, prepare balsamic cranberry sauce: in a small saucepan, combine balsamic vinegar, cranberries, and brown sugar. Simmer over medium heat until cranberries burst and sauce thickens, about 15 minutes. Set aside.
  4. Once ribs are done, shred the meat, discarding bones and excess fat.
  5. Toast slider buns with butter until golden.
  6. Assemble sliders by layering shredded short rib, a spoonful of balsamic cranberry sauce, and a handful of arugula or baby spinach on each bun.
  7. Serve immediately and enjoy!

Notes

For an extra kick, add a slice of melted cheese or a dollop of horseradish cream to your sliders.
