Bowl of Delicious Sausage Sweet Potato Kale Soup

This hearty sausage, sweet potato, and kale soup is packed with flavor and nutrients. It’s a comforting and healthy meal perfect for a chilly evening.

Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 large sweet potato, peeled and diced
  • 1 bunch kale, stemmed and chopped
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat a tablespoon of olive oil in a large pot or Dutch oven over medium-high heat. Add the sausage and cook, breaking it up with a spoon, until browned. Remove sausage from the pot and set aside.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more.
  3. Add the diced sweet potato, diced tomatoes (with juice), chicken broth, thyme, and red pepper flakes (if using). Bring to a boil, then reduce heat and simmer for 15 minutes, or until the sweet potato is tender.
  4. Stir in the cooked sausage and chopped kale. Cook for another 5-10 minutes, or until the kale is wilted and tender.
  5. Season with salt and pepper to taste.
  6. Serve hot.

Notes

For a creamier soup, stir in a splash of heavy cream or coconut milk before serving. You can also add other vegetables like carrots or celery.
