Sausage and Courgette Pasta

A hearty and flavorful pasta dish combining savory sausage with tender courgettes, perfect for a quick and satisfying dinner.

  • 250g dried pasta (penne or fusilli)
  • 2 tbsp olive oil
  • 3 Italian sausages, casings removed
  • 2 medium courgettes, sliced
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 400g canned chopped tomatoes
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper, to taste
  • Fresh basil leaves, for garnish
  • Grated Parmesan cheese, to serve

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, sautéing until softened.
  3. Add the sausage meat, breaking it up with a spoon, and cook until browned and cooked through.
  4. Stir in the sliced courgettes and cook for 5 minutes until tender.
  5. Add the canned chopped tomatoes and dried oregano. Simmer for 10 minutes, seasoning with salt and pepper.
  6. Combine the cooked pasta with the sausage and courgette sauce, tossing well to coat.
  7. Serve garnished with fresh basil and a sprinkle of grated Parmesan cheese.

Notes

For extra heat, add a pinch of chili flakes while cooking the sausage. This dish pairs wonderfully with a crisp green salad or garlic bread.
