Ingredients

Scale
  • 3 to 4 lb beef roast (rump or sirloin)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup beef broth
  • Optional: 1 onion, quartered

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pat the beef roast dry with paper towels.
  3. In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
  4. Rub the herb mixture evenly over the entire surface of the roast.
  5. Place the roast on a rack in a roasting pan. Add onion quarters around the roast if using.
  6. Roast in the preheated oven for about 20 minutes per pound for medium-rare (internal temperature of 135°F/57°C).
  7. Halfway through, baste the roast with beef broth to keep it moist.
  8. Once cooked, remove the roast and tent with foil. Let it rest for 15 minutes before slicing.
  9. Slice thinly against the grain and serve with your choice of sides.

Notes

For enhanced flavor, marinate the beef with the herb mixture overnight. Serve with roasted vegetables or mashed potatoes for a complete meal.
