These Reese’s Peanut Butter Cup Cookies are soft, chewy, and packed with peanut butter flavor. Each bite features a melted Reese’s Peanut Butter Cup for the ultimate dessert experience.

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 12 Reese’s Peanut Butter Cups, unwrapped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, cream together the butter, granulated sugar, brown sugar, and peanut butter until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
  7. Bake for 8-10 minutes, or until the edges are lightly golden brown.
  8. Remove from oven and immediately press a Reese’s Peanut Butter Cup into the center of each cookie.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a richer flavor, use dark chocolate Reese’s Peanut Butter Cups. You can also chill the dough for 30 minutes before baking to prevent the cookies from spreading too much.
