Ramen Noodle Soup

A comforting bowl of traditional Japanese ramen noodle soup featuring savory broth, tender noodles, and fresh toppings for a satisfying meal.

Ingredients

  • 4 cups chicken or vegetable broth
  • 2 packs ramen noodles (discard seasoning packets)
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • 2 green onions, chopped
  • 1 soft boiled egg (optional)
  • 1 cup sliced mushrooms
  • 1 cup baby spinach
  • 1 tbsp miso paste (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat sesame oil over medium heat and sauté garlic and ginger until fragrant, about 1 minute.
  2. Add the chicken or vegetable broth and bring to a gentle boil.
  3. Stir in soy sauce and miso paste (if using) to enrich the broth flavor.
  4. Add sliced mushrooms and cook for 3-4 minutes until tender.
  5. Add ramen noodles and cook according to package instructions, usually 3-4 minutes.
  6. During the last minute of cooking, add baby spinach, stirring until wilted.
  7. Season the soup with salt and pepper to taste.
  8. Serve hot topped with chopped green onions and a soft boiled egg if desired.

Notes

For added protein, top with sliced grilled chicken or tofu. Garnish with a sprinkle of toasted sesame seeds for extra flavor.
