  • For the Streusel:
  • ½ cup all-purpose flour
  • ¼ cup packed brown sugar
  • ¼ cup rolled oats
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • ¼ cup cold unsalted butter, cubed
  • For the Crust:
  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • For the Cheesecake Filling:
  • 24 ounces cream cheese, softened
  • 1 ½ cups granulated sugar
  • 1 cup pumpkin puree
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves

Instructions

  1. Make the Streusel: In a medium bowl, combine flour, brown sugar, oats, cinnamon, and nutmeg. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Refrigerate until ready to use.
  2. Make the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan.
  3. Bake the Crust: Bake the crust for 8-10 minutes, or until lightly golden. Let cool slightly.
  4. Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.
  5. Add the pumpkin puree, eggs, vanilla extract, cinnamon, ginger, and cloves. Beat until well combined.
  6. Assemble and Bake: Pour the cheesecake filling over the cooled crust. Sprinkle the streusel topping evenly over the filling.
  7. Bake for 55-65 minutes, or until the edges are set but the center still has a slight jiggle.
  8. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  9. Remove from the oven and let cool completely at room temperature.
  10. Refrigerate for at least 4 hours, or preferably overnight, before serving.

Serve chilled with a dollop of whipped cream or a drizzle of caramel sauce for an extra decadent treat.
