This Pumpkin Spice French Toast Casserole is a warm, cozy breakfast perfect for fall, featuring layers of cinnamon and pumpkin-infused custard baked to golden perfection.

  • 1 loaf day-old brioche or challah bread, cut into cubes
  • 1 cup pumpkin puree
  • 6 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 3/4 cup brown sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans (optional)
  • Butter or cooking spray, for greasing
  • Maple syrup, for serving

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Place cubed bread evenly in the prepared dish.
  3. In a large bowl, whisk together eggs, pumpkin puree, milk, heavy cream, brown sugar, pumpkin pie spice, cinnamon, vanilla extract, and salt until smooth.
  4. Pour the custard mixture evenly over the bread cubes, pressing down slightly to soak all pieces.
  5. Sprinkle chopped pecans over the top, if using.
  6. Cover the dish tightly with aluminum foil and refrigerate for at least 1 hour or overnight for best results.
  7. Bake covered for 40 minutes. Remove foil and bake an additional 15 minutes, until the top is golden and set.
  8. Let cool for 5 minutes before serving. Drizzle with maple syrup and enjoy warm.

Notes

For extra richness, add a drizzle of caramel sauce or serve with whipped cream. Leftovers reheat well in the oven or microwave.
