Freshly Baked Protein Banana Bread

This protein banana bread is a healthy and delicious way to start your day or enjoy as a post-workout snack. Packed with protein and naturally sweetened with ripe bananas, it’s a guilt-free treat you’ll love.

  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1/4 cup milk (dairy or non-dairy)
  • 1/4 cup melted coconut oil or vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup vanilla protein powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas.
  3. Add the eggs, milk, melted coconut oil, and vanilla extract to the mashed bananas and mix well.
  4. In a separate bowl, whisk together the flour, protein powder, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the chopped walnuts or pecans, if using.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For an extra touch, drizzle with melted chocolate or sprinkle with cinnamon sugar before baking. You can also substitute different types of protein powder to customize the flavor.
