prime rib roast recipe

This classic prime rib roast is a show-stopping centerpiece for any holiday meal. Tender, juicy, and perfectly seasoned, it’s easier to make than you might think!

  • 1 (4-5 pound) prime rib roast
  • 2 tablespoons olive oil
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 cup beef broth

Instructions

  1. Preheat oven to 450°F (232°C).
  2. Pat the prime rib roast dry with paper towels.
  3. In a small bowl, combine olive oil, salt, pepper, garlic powder, onion powder, rosemary, and thyme.
  4. Rub the seasoning mixture all over the roast.
  5. Place the roast in a roasting pan, bone-side down.
  6. Roast for 15 minutes, then reduce the oven temperature to 325°F (163°C).
  7. Continue roasting until a meat thermometer inserted into the thickest part of the roast registers 125°F (52°C) for rare, 135°F (57°C) for medium-rare, or 145°F (63°C) for medium. This will take approximately 15-20 minutes per pound for rare.
  8. Remove the roast from the oven and tent it with foil. Let it rest for at least 20 minutes before carving.
  9. While the roast rests, pour the beef broth into the roasting pan and scrape up any browned bits from the bottom of the pan. This will create a simple pan sauce.
  10. Carve the roast against the grain and serve with the pan sauce.

Notes

For extra flavor, add chopped carrots, celery, and onions to the bottom of the roasting pan before placing the roast on top.
