  • 1 (10-inch) pie crust, pre-made or homemade
  • 1 pound possum meat, cooked and shredded
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup frozen peas
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, melt butter over medium heat. Add onion, celery, and carrots and cook until softened, about 5-7 minutes. Add garlic, thyme, sage, salt, and pepper and cook for another minute.
  3. Stir in flour and cook for 1 minute, stirring constantly. Gradually whisk in chicken broth and bring to a simmer, stirring until thickened.
  4. Stir in the shredded possum meat and frozen peas. Remove from heat.
  5. Pour the possum mixture into the pie crust.
  6. Brush the edges of the pie crust with beaten egg.
  7. Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
  8. Let cool slightly before serving.

Notes

Serve warm with a side of mashed potatoes or green beans for a complete and satisfying meal. For added flavor, consider adding a splash of Worcestershire sauce to the filling.
