poppy seed chicken casserole

This creamy and comforting poppy seed chicken casserole combines tender chicken, a rich sauce, and a crunchy topping for a deliciously satisfying meal.

  • 3 cups cooked chicken, shredded
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup mayonnaise
  • 1 tablespoon poppy seeds
  • 1 cup crushed Ritz crackers
  • 1/4 cup butter, melted
  • 1/2 cup shredded cheddar cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the sour cream, cream of chicken soup, mayonnaise, poppy seeds, salt, and pepper.
  3. Stir in the shredded cooked chicken until well coated.
  4. Pour the mixture into a greased 9×13-inch baking dish.
  5. In a small bowl, mix the crushed Ritz crackers with melted butter.
  6. Sprinkle the cracker mixture evenly over the chicken mixture.
  7. Optionally, sprinkle shredded cheddar cheese on top.
  8. Bake for 30–35 minutes or until bubbly and golden brown on top.
  9. Let stand for a few minutes before serving.
