Polish Sernik is a traditional baked cheesecake made with creamy twaróg cheese, delivering a rich and tangy flavor perfect for dessert lovers.

  • 1 lb twaróg (Polish farmer’s cheese) or cream cheese
  • 1 cup sugar
  • 4 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup all-purpose flour
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1 tbsp lemon zest (optional)
  • Pinch of salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
  2. In a large bowl, combine twaróg (or cream cheese) and sugar until smooth.
  3. Add eggs one at a time, beating well after each addition.
  4. Mix in melted butter, sour cream, vanilla extract, lemon zest, and salt until fully incorporated.
  5. Gradually add flour and mix until just combined.
  6. Pour batter into prepared pan and smooth the surface.
  7. Bake for 50-60 minutes or until the center is mostly set but slightly jiggly.
  8. Turn off oven, crack the door, and let the cheesecake cool inside for 1 hour.
  9. Remove from oven, cool completely, then refrigerate for at least 4 hours or overnight.
  10. Before serving, dust the top with powdered sugar if desired.

Notes

For a richer flavor, serve chilled with fresh berries or a fruit compote.
