  • 1 box (3.4 oz) instant pistachio pudding mix
  • 2 cups cold milk
  • 1 tub (8 oz) frozen whipped topping, thawed
  • 1 package (8 oz) cream cheese, softened
  • 1 cup chopped pecans
  • 1 package (12 oz) yellow cake mix, baked and cooled
  • 1/2 cup crushed pistachios for garnish

Instructions

  1. Prepare yellow cake mix according to package instructions and bake in a 9×13-inch pan; let cool completely.
  2. In a medium bowl, combine softened cream cheese and half of the whipped topping; spread evenly over the cooled cake layer.
  3. In another bowl, whisk the instant pistachio pudding mix into the cold milk until thickened, then spread over the cream cheese layer.
  4. Spread the remaining whipped topping over the pudding layer.
  5. Sprinkle chopped pecans evenly on top, followed by crushed pistachios as garnish.
  6. Refrigerate for at least 4 hours or overnight before serving to allow layers to set.
